The mochi rice used for these crackers is sourced from the highest quality varieties, namely Saga Prefecture's Hiyoku Mochi and Kyoto Prefecture's Shinba Futae. The rice is steamed in a Hinoki cypress steamer, preserving the natural flavor of the rice grains. The result is a delightful rice cracker that encapsulates the essence of Japanese rice.
